There is not a lot you can do to discourage this misplaced enthusiasm, unless you have the time and money to closely supervise every aspect of your project.

You may simply have to consistently and repeatedly emphasise that you are interested in quality and attention to detail, not necessarily thrift, and you will still be well advised to closely monitor projects that require delicate and/or critical work.
